Ever had warm, buttery peach crisp in the middle of winter? It’s delicious and comforting all at once. This is an easy peach crisp recipe with canned peaches that adds a welcome wintery Christmas holiday twist with lemon, ginger, and a hint of rosemary.

First, preheat your oven to 400 degree F.
Next, you’ll need two 24 oz cans of canned peaches.

Drain them and put the peaches in a mixing bowl.

Then, to this bowl of peaches add:
- 1/2 tsp cinnamon
- 1/3 c. flour
- 1/2 tsp chopped ginger
- 1/2 tsp lemon juice
- 1/2 tsp lemon zest
That 1/2 tsp gets a lot of use in this recipe!
Here is the fresh chopped ginger.

For the lemon zest, I only had the loopy zester on hand so that’s I used, but I’d recommend the wand zester for this application if you have one. Make sure to wash your lemon before you zest it!

Once all the peach bowl ingredients are mixed in the peach bowl, add these to a backing dish. I use a 9 inch diameter cast iron pan. You could use an 8 inch square backing dish as well.
Mix the Crisp:
Now, in a separate bowl, mix:
- 1/2 c. brown sugar
- 1/2 c. flour
- 1 cup rolled oats
- 1/2 tsp cinnamon
- 1/4 tsp salt
- 1/2 tsp chopped rosemary
Here I am getting the rosemary leaves off the stem. You can fine chop the rosemary or leave longer leaves for a more rustic feel. I like to keep a mix of fine and chunky chopped rosemary.

Now mix all the dry ingredients together in the dry mix bowl.
Next, soften 1 stick (8 TBSP or 1/2 cup) butter and mix well into the dry mix to make the crisp.

Cover Peaches with Crisp & Bake:
Next, spread the crisp mix over the top of the peaches. Bake at 400 degree F for 30 minutes.

Let the crisp cool slightly, but this peach crisp recipe is best served warm with a small scoop of vanilla or butter pecan ice cream. Enjoy!

Ingredients
Peach Mix
- 2 jars 24 oz canned peaches drained
- 1/2 tsp chopped ginger
- 1/2 tsp lemon juice
- 1/2 tsp lemon zest
- 1/2 tsp cinnamon
- 1/3 c. flour
Crisp Mix
- 1/2 c. brown sugar
- 1/2 c. flour
- 1 c. rolled oats
- 1/4 tsp salt
- 1/2 tsp chopped rosemary
- 1/2 c. softened butter
Instructions
- Combine the Peach Mix ingredients in a bowl. Add the peach mix to an 8 inch square or similar backing dish. In a separate bowl, combine the Crisp Mix ingredients. Then top the peaches with the Crisp Mix. Bake at 400 degree F. for 30 mins. Optional: Top with powdered sugar and garnish with rosemary sprigs. Best served warm with a small scoop of vanilla or butter pecan ice cream. Enjoy and Merry Christmas!
